Ok. So this was our 3rd time in. The quality of ingredients is definitely obvious. The creativity is probably a bit much (or in yesterday's case probably too many sweet items on the menu, including the "bento and the "chilled" and the "squab") for our taste buds. We're not fans of sweet and savory. Otherwise things were quite tasty. See the menu and the food pictures, but we did enjoy the oyster and the tartlet, the hearth course (good bread with accoutrements), the grain course (agnolotti was very tasty with the mousses and sauces and what tasted like smoked salmon roe), the pear sorbet (palette cleanser), the bison (or the wagu my husband substituted instead) with the wild rice. We were not fans of the sun choke pans cotta (but caviar was of course delish) or the chilled dungeness crab dish as it was very sweet and the melon and ponzu overpowered the crab. Plus the celery was just random in the dish. The squab could have been wonderful (meat was tender and cooked well) but the skin wasn't crispy (& syrupy sweet) at all and the cumquat skins were like candy and just didn't quiet work. It's worth a visit to experience a nice 7 course meal, but Beckon is MUCH better if you'd prefer to splurge, and can only choose one place to try.

Came here a couple weeks back for our anniversary, walked in with expectations at their highest and very enthusiastic about spending a bunch of money on a special meal. Since that night, I've been struggling to really put into words how I felt about it. Underwhelming is the dominant feeling I have. The food is no doubt remarkable and a true work of art. Flawless in execution and doing its sincere best to paint a compelling culinary picture of the state of Colorado by using small quantities of locally sourced ingredients in the most creative of ways. Being a hardcore Coloradan I truly appreciate that, but the problem is my tastebuds are indifferent to the backstory. The dishes were all great, but not consistently extraordinary from a taste perspective. This was a $600 meal for two after auto-gratuity (keep in mind we splurged on the a la carte cocktail menu), so I expect rightfully so to be blown away by each dish. But the dishes felt hit-or-miss. It wasn't until the 4th course that we had something that we were head-over-heals for. The piada bread with the winter squash mole and sour cherry spreads was heavenly, although was so hot that we had to burn our fingers a bit trying to pull it apart at first. But the highlight of the evening without any doubt was the Colorado bison. I've never had bison so perfectly cooked and delightfully seasoned, and the rich, spicy ssamjang sauce that coated it sent us to another world. I also really enjoyed the squab, which was another perfectly cooked piece of meat that has me lusting over just the taste of skin on it. I mentioned earlier that we went to town on the cocktail menu, as the cocktails were exceptional as they should be. I really enjoyed their use of aquavit in the first one I had (forgot the name of it). I never really had aquavit before, but I'm now planning on buying a bottle of it after this meal. We also had a reposado tequila cocktail with a delightful, earthy agave flavor that was exceptional. But I don't feel like I got my $600 worth despite indulging in a couple remarkable dishes and some fantastic cocktails. At that price point, at a restaurant like this, I expect a majority of the courses to be breathtaking, not just two or three. I also found the ambience to be a bit disappointing. The restaurant is in a strange location, an area I've never actually been in despite living in Denver for 30 years. And it was very dead all around, mostly houses, no after-dinner nightlife, just a few small stores that were closed for the day. The service was incredible, but the restaurant was very small and only capable of serving a handful of parties, definitely more intimate than I expected. So to put a bow on this, we had some amazing stuff here, but it wasn't consistently amazing as a $600 meal should be. I'm glad I got to experience this, but we probably would have had a more satisfying meal had we gone to one of the many other highly-rated special occasion spots around.

This is an absolute must add to your list. I originally went to the wolf's tailor a few years ago and learning that they got a Michelin star I wanted to go back and see how things have changed. I was blown away by the progress. The service was beyond what i expected. The explanation of the dishes to the presentation and delivery made the meal interesting without feeling pretentious. They were also very attentive to my celiac (gluten allergy) and provided substitutes for each dish, which in my experience isn't often the case with tasting menus. The food was spectacular, each plate was unique and brought you on its own journey. Every dish landed to where i had a hard time picking a favorite. In the end the "caviar" looking dish that tasted of roasted sesame won that distinction. What struck me the most was how in balance everything was. No flavor dominated the dish nor was there anything that was too subtle. It was harmony on a plate. I opted to have various old fashioneds and my husband did the non-alcoholic drink pairing which was in every way as good as the meal itself. If you have this on your radar i would recommend moving it up the list. It feels like they are only going to get better from here.

What an amazing experience at The Wolf's Tailor! We decided to visit during our trip after hearing all the great reviews, and I'm so glad we did. We opted for a table in the tent, which was surprisingly warm despite the cold weather outside. The staff members are extremely nice and funny, which made the experience that much more delightful! The food was all delicious, and all prepared so meticulously. The standouts were the Dungeness crab, the squab, and the pasta. The palisade peach dessert was also such a core memory dish!

I have been wanting to come here for such a long time. A group of four of us made reservations for 5:15 to be in a tent which we had all heard was the best experience. They called us at 3:15 the day of our reservation and said that they overbooked the tent so we wouldn't be able to do that. We could either reschedule (which was way too last minute and so hard to find a date that four people can do) or keep the same time and they would give us a glass of champagne. We ended up begrudgingly doing that. I would say it was a small glass of champagne. I don't understand how a restaurant of this caliber can overbook the tents. Everything was smooth once we got there. We were seated right away, and they took our coats and remembered which coats we had at the end of the evening. We had nine courses which was $175 per person (the outside tent is an additional $25) and I had the beverage pairing which was $125. No one in my group got the wine pairing, but they said it was $205. The beverage pairing was a variety of different small cocktails and glasses of wine for each course. There were some courses we really enjoyed and others not so much. Some of my favorites were the small oyster on the first course, crab, squab, pasta (although others in my group didn't love that), and the frozen intermezzo. I think my very favorite was the bread with the different spreads. We also received a hot towel after that one since you used your fingers to break apart the bread. My least favorite was probably the bison over rice. While the bison was good, the rice was extremely spicy and I couldn't even eat it. The service was top-notch with different people coming out and explaining the different courses, including how it was sourced (much of it local), and drinks. Everyone was very knowledgeable. The presentation on the dishes was beautiful. The whole dinner took about three hours and with the 22% service charge, mine came to $400. I was disappointed because I thought we were supposed to get a menu that showed everything we had, but we didn't get one.
